]]>Serves 4
1 Mango – diced
½ orange Capsicum – diced
Handful of fresh Coriander leaves
½ tsp fresh Ginger – grated
2 red Chillis – finely chopped
Juice of half a Lemon
½ a pack of Sea Tangle Kelp Noodles
250g raw Prawns – roughly chopped
½ an Onion – finely chopped
2 cloves Garlic – minced
1 Tbsp – Red Boat Fish Sauce
2 large Eggs – beaten
Prepare the salsa by combining all the ingredients in a bowl. Set aside.
Rinse the kelp noodles and snip noodles a few times with scissors. Combine with the rest of the prawn cake ingredients In a large bowl.
Cook the prawn cakes in a preheated well oiled frypan until golden.
Serve topped with the salsa and with a side of fresh salad greens.

]]>Kelp Noodles are a great way to reduce your carbohydrate intake while providing unique nutritional benefits due to their rich mineral content, in particular iodine, a mineral critical in the functioning of the thyroid.
Incorporating sea vegetables like Kelp Noodles into a meal is an enjoyable way of meeting the requirement for this important mineral, especially now that iodised salt is used less in favour of unfortified varieties.
Kelp Noodles also have the advantage of being a low calorie noodle unlike rice or wheat varieties. They are naturally gluten free and low allergenic to suit all diets.
Simply rinse and Kelp Noodles are ready to be added to your dish. They can be eaten raw where they have a supple yet crunchy texture, not unlike iceberg lettuce, or use instead of traditional noodles in stir fries or soups. Add near the end of cooking where they will soften within 2-3 minutes. They have a neutral flavour and don’t taste ‘fishy’ at all. If you want a softer noodle but still want a raw product simply soak in warm water to soften without cooking.
Kelp Noodles are made from only three ingredients, the sea vegetable Kelp, sodium alginate (a sodium extracted from a seaweed) and water. Kelp noodles are unexpectedly transparent due to being derived from the clear inner part of the kelp after removing the outer ‘skin’.
