The Elderflower for this Elderflower cordial is sourced from beneath the mighty Southern Alps of New Zealand. The blossom is steeped for 24 hours to extract all the goodness and flavour into the syrup. Elderflower cordial has a floral flavour with hints of honeydew, gooseberry and lychees. Traditionally known as the “Country Folks Medicine Chest” because it was used to remedy a variety of conditions.
Makes 3 1/2 litres. It’s also great added to black tea, mixed with white spirit cocktails, to flavour water kefir or for poaching salmon.
