Interesting flour, quite a strong but savoury banana flour. Excellent in baking goods for people on an AIP diet. Not wonderful for tortillas, but not awful either. When I used it for tortillas, the odd savoury banana flavour was a bit different, but I got used to it. And the banana flour tortillas went perfectly with a seafood ceviche filling – the banana flavour actually worked quite well here. So to that effect – I was pretty happy as I’ve been really limited on the AIP diet. The uses for this flavour has added great variety to my diet. Thanks Food Compass for importing it for us!
